About Our Doctors
Dr. Amy Chi
Dr. Amy Chi earned her undergraduate degree from the University of Minnesota’s College of Biological Sciences and went on to Dental School at the University of Minnesota. After receiving her DDS Degree in 2008, Amy pursued an elective residency at the VA Medical Center in Minneapolis. At that time she was honored to serve Minnesota’s veterans and their dental needs.
Following residency Dr. Chi has been in private practice for over 15 years serving patients in the Twin Cities. She took over the practice from Dr. Derr and is continuing the tradition of exceptional dental care. She was nominated Top Dentist by Minnesota Monthly.
Dr. Chi enjoys all aspects of dentistry and treats patients of all ages and dental needs. She is committed to utilizing the latest dental techniques and materials. She participates in a variety of continuing education courses and is a member of the American Dental Association, the Minnesota Dental Association and The Minneapolis District Dental Society.
Amy and her husband Erick, an Edina native, live locally and are members of Shepherd of the Hills Lutheran Church. Amy and Erick enjoy spending time with their children Annie and Jack, being outdoors, traveling, and relaxing with family and friends.
Dr. Emily Allen
Dr. Emily Allen first studied bioproducts and biosystems engineering at the University of Minnesota- Twin Cities. After her undergraduate degree, she completed her doctor of dental surgery program at the University of Michigan. She loves transforming smiles and caring for long-term dental health of our patients. She participates in a variety of continuing education courses and is a member of the American Dental Association, and Minnesota Dental Association. Dr. Allen became a partner alongside Dr. Chi in 2024 after practicing for a number of years in Saint Paul . We love having her in our private practice in Eden Prairie and appreciate her gentle touch and artistic skills. Patients love her personable dental care and her great communication, recommending dental care that benefits them.
Dr. Emily grew up in Minnetonka and currently lives in the western suburbs with her family and their adorable dog Asher. In her spare time, she enjoys cooking, going for walks, skiing, and being outdoors.
Dr. Spencer Amstrup
We are pleased to announce the addition of Dr. Spencer Amstrup. She is a graduate of Creighton University School of Dentistry with many years of clinical experience. She is excited to join the Sapphire Family Dental Team in September!
Born and raised in the Twin Cities, Dr. Amstrup is looking forward to providing gentle , comprehensive dental care to the Edina and Eden Prairie communities.
She and her Australian Shepherd, Reuben, love spending time outdoors together, enjoying activities such as hiking, snowshoeing and rollerblading. When she’s not caring for your smile, she can be found on the volleyball court, tending to her flower farm, or curled up with a good book.
Dr. Steve Rzepecki
Dr. Steve Rzepecki is retiring August 2026. He has been practicing dentistry for almost 50 years ! We’re so happy for all of his accomplishments and great patient care.
We will miss him dearly but wish him a great retirement!
